The Araponga region is a micro-region within the Matas de Minas in the estate of Minas Gerais. Embraced by the Atlantic forest, the region's microclimate makes it perfectly suited to the production of specialty coffees. Aroponga is privileged with high mountains that lead to a range of different temperature and humidity levels, creating ideal growing conditions.
For this particular lot, coffees harvested from across the region were taken to a processing facility where they were sorted by density. The selected cherries were then spread on suspended beds for drying, initially left open and in thicker layers to stimulate natural fermentation. After two days the cherries were spread thinner and the beds were covered to ensure slow and uniform drying until they reached the desired moisture content around ten days later. These cherries were then pulped and the beans stored until shipping.
